Now We're Cookin': Chicken Lettuce Wraps

Simple. Light. Nutritious. Three components of the perfect summertime meal. Chicken lettuce wraps check off each box and are a low carb meal your whole family will enjoy.

Ingredients:

  • 1 tablespoon olive or sesame oil

  • 1-pound ground chicken breast, raw

  • 3-4 sprigs green onion, diced

  • 1 red pepper, diced

  • 2 cloves garlic, minced

  • 1 tablespoon fresh ginger, grated

  • 1-8 oz. can water chestnuts, drained and diced

  • 2 tablespoons light soy sauce

  • ¼ cup Hoisin sauce

  • 1 Tablespoon rice wine vinegar

  • 2 cups brown rice, cooked

  • 1 head of Butter or Bibb lettuce – leaves separated, rinsed and dry

Directions:

  1. Heat oil in a large skillet over medium-high heat. Add the ground chicken breast and cook until browned for about 5 minutes.

  2. Remove the ground chicken from the pan after cooking and set aside. Add the next 8 ingredients to the skillet and simmer for 2-3 minutes.

  3. Return the cooked ground chicken to the skillet and stir into the vegetable mixture until heated for 2-3 minutes.

  4. Scoop a spoonful of meat and vegetable mixture onto a lettuce leaf. Top with a spoonful of cooked brown rice.
