Now We're Cookin': Roasted Broccoli and Cauliflower with Lemon and Garlic

There's no better healthy side dish than roasted vegetables in the winter. Roasted broccoli and cauliflower with lemon and garlic can be paired with kebabs, your favorite fish or soup to create a comforting meal.

Ingredients:

  • 1 head of broccoli, cut into bite size pieces
  • 1 head of cauliflower, cut into bite size pieces
  • 1 lemon, thinly sliced
  • 4 garlic cloves, peeled and thinly sliced
  • 3 tablespoons of olive oil
  • ½ teaspoon of salt

Directions:

  1. Preheat oven to 475 degrees Fahrenheit.
  2. Line one rimmed baking sheets with foil and add broccoli, cauliflower, lemon slices and sliced garlic.
  3. Drizzle vegetables with olive oil and sprinkle with salt.
  4. Bake in oven for 25 to 30 minutes turning halfway through cooking. Vegetables will be browned.
